    "Kanagao" is named after the land where our brewery is located. It was created by expressing the beautiful nature and the blessings of the great land by Mr.Noguchi. The gentle aroma,smooth mouthfeel,and well-balanced flavor are followed by a lingering aftertaste that quietly fades away. It is suitable for a wide range of temperatures, from cold sake to hot sake, and complements all kinds of dishes.

    This sake has minerality and is reminiscent of pears. When you take a sip, it has a fresh and refined mouthfeel and spreads its sweet taste and rich flavor across the palate. It goes down well and refreshes. This sake has exquisite balance of all elements.
    It can be served at a wide range of temperatures, not only cold sake at around 10℃/50℉. It can also be served at room temperature or 42℃/108℉, and can be paired with a wide variety of dishes.

    This sake is made with a local rice nearby the brewery. A fragrance reminiscent of Oriental flowers that is mild and calms. When you try this sake there is a fine, silky, smooth mouthfeel as well as a slightly milky richness. The finish is shor t and crisp.The sweetness is enhanced at room temperature and mellowness increases at 42℃/108℉.
    It goes well with relatively light dishes such as seafood and vegetables.

  • HARU NO SHIBORITATE

    This is a seasonal product brewed to be a thin, cloudy "origarami" that looks like cherry blossoms petals dancing in spring.
    The sweet aroma of white peaches and cotton candy is captivating from the opening of the bottle, and as you sip it, the gentle flavor of rice spreads across your palate.
    The aftertaste has a refreshing acidity and bitterness like lemon peel and pairs well with dishes.
    Enjoy it with spring vegetables, tempura, rice with bamboo shoots, chirashi sushi and other spring dishes.
    It is also perfect for cherry blossom viewing.

  • NATSU NO NAMASAKE

    This summer limited sake is packaged in a lapis lazuli-colored bottle, designed to make you feel cool and refreshing.
    The aroma is fresh muscat, with melon-like nuances. On the palate, it has a light umami flavor, round and soft acidity, and a moderately bitter aftertaste that goes well with summer foods such as pike conger, raw oysters, carpaccio, caprese salad, etc.
    Enjoy it well chilled in a glass sake cup.

  • HIYAOROSHI

    After pasteurizing once in the spring, it is matured in a large tank over the summer. Its mellow, calm, and robust flavor is a reminder of the arrival of autumn.
    The palate is filled with a full aroma derived from the rice with sweetness and acidity. The aftertaste is pleasantly slightly bitter. It is a perfect match for seasonal delicacies, such as fatty pacific saury, bonito, and steamed matsutake mushrooms in an earthen pot; as well as smoked or spiced dishes and well-seasoned dishes such as teriyaki.
    The sweetness and acidity are enhanced when stored in the refrigerator, and the synergy with food can be enjoyed more fully when served at room temperature or warmed to a lukewarm temperature of about 40℃/104℉.

    HIYAOROSHI

  • FUYU SAKE

    The sake has matured to become a sake that can be enjoyed at a wide range of temperatures. It has a dry expression when drunk cold or at room temperature.
    When it is warmed up to 40℃/104℉, the flavour swells and the aftertaste is mellow and the umami reaches its peak.
    When warmed further, the flavour sharpens to 55℃/131℉.
    The umami takes on the flavours of hot meat and fried food, while the sharpness in the throat helps to refresh the palate by cutting the fat.
    Enjoy it in the cold season at the temperature of your choice, with ceramic cup.

    This is a commemorative new sake, the first to be brewed and the first to be squeezed. Fresh, sweet fruit aroma of young green apples.
    This product has a youthful citrus aroma, a fresh, clear, crisp taste, and a piquant gassy sensation. Since it is a new sake, there is a slight astringency, but it is a special taste that can only be enjoyed at this time each year.
    Please enjoy it chilled with sushi, and other dishes during the upcoming year-end and New Year's season.
    Serve chilled, not too cold,at around 10℃/50°F,in glassware.

    Our sake lees are distilled under low pressure by Mr. Noguchi and his brewers.
    Like some of the sakes produced by NOGUCHI NAOHIKO SAKE INSTITUTE, our shochu has a mild aroma like that of a ginjo sake: a delicate fruity flavor; a delicious taste derived from rice; and a crisp finish.
    It can be enjoyed straight or on the rocks as an after-dinner drink; as an in-dinner drink with water or soda;or used as an ingredient in cocktails.

  • Junmai Ginjo made with organic rice

    Junmai Ginjo made from JAS (Japanese Agriculture Standards) -certified organic rice (Gohyakumangoku), which has been worked on with local contract farmers since the 2019 Vintage. The aroma is sweet like yellow flowers, with green apple and melon-like freshness, and from the mid-palate, a cashew-nut-like savouriness, with a good harmony of youthfulness and maturity.
    In the mouth, the soft, elegant sweetness and almond-like bitterness in the second half are complemented by a refreshing acidity. The gorgeous fruit flavors of the nose continue through to the finish.

  • YAMAHAI GOHYAKUMANGOKU

    Sweet and sour aroma recalls orange peel. When you try this sake, you can feel a soft, creamy flavor, a slightly sour richness, and a gentle acidity. In contrast to heavy, thick flavors it has an exquisite finish in the throat.
    It can be enjoyed in a wide range of temperatures from near room temperature to 50℃/122℉.
    When heated, it can be served with fatty foods such as eel and Western meats. It can also be served with fatty foods such as tempura, teriyaki, or beefsteak.

    Refreshing sour fragrance recalls strawberry. When you take a sip, it has a fresh, clean, sweet umami and crispiness from gentle acidity like yogurt that produces elegance. The finish is longer but crisp at last. At 12℃/54℉, you will enjoy its fruity flavor, and at 42℃/108℉, you will enjoy its creaminess and pleasant acidity. It has a sweet taste and goes well with creamy dishes.

    This sake has a berry fruit aroma with refreshing acidity and the scent of lush mountains. When you have a sip the balance of umami and acidity with a soft mouthfeel is pleasant. It feels refreshing -- like herbs in the throat -- and has an elegant, clean finish.
    When in a chilled state of around 10℃/50℉, it goes well with raw seafood such as sashimi and sushi, and at about 42℃/108℉, its aroma and flavor expand even further, and it goes well with meat dishes.

    The aroma is like fresh, sweet, green fruit like melon and lily flower. In the mouth, the impact is friendly, gentle, and soft, and from the mid-palate, the fruity flavor stands out.
    It should not be chilled too much, but at a temperature close to room temperature about 15℃/59℉ to bring out its gentleness and softness, and can be enjoyed with dishes that take full advantage of the flavors of the ingredients themselves.

    This is a limited product that has been pasteurized and stored by long-term, low temperature aging.
    The pine mot if on our paulownia wood box which stores the elegant DAIGINJO produced by Mr. Naohiko Noguchi is symbolic.
    Pine refers to the highest grade in the Japanese traditional class represented by "Pine, Bamboo and Plum". Since the pine tree is evergreen, it has been regarded as a symbol of good fortune and long life since the Heian period.
    Pine is also the symbol of the Cit y of Komat su Cit y, Ishikawa Prefecture (komatsu translates as “young pine”) where the sake brewery is located.

    The 2018 vintage is a commemorative vintage of the 70th year since Mr. Noguchi, known as the “the God of Sake Brewing ”, started his career of sake brewing. This sake is bottled from the single best batch of the entire season, as selected by Mr. Noguchi himself. We introduce this Limited Edition; in which special aging techniques and processes have also been thoroughly undertaken.
    Please enjoy this ultimate taste which transcends time and borders.
    For this special sake, NOGUCHI NAOHIKO SAKE INSTITUTE Inc. asked Mr. Toshio Ohi to design our bottle. Thus, our unique bottle with an asymmetrical “distorted cur ve” was born.
    Mr. Ohi not only works as a contemporary artist, but is also the 11th generation ancestor of his family, Ohi Chozaemon, which has a lineage of over 350 years histor y in Kanazawa creating works of significant artisanal craftsmanship.

    Mr. Naohiko Noguchi will celebrate his 90th birthday on Saturday, December 24, 2022.
    This is a special product released to commemorate his 90th birthday.
    This is a collection item limited to 900 bottles, carefully selected and “assemblage” (blending) together by Mr. Noguchi from the treasured sake he has brewed and accumulated since the first year of 2017.
    The bottle and the line on the box are lapis lazuli in color. The tag bears a serial number (001/900).
    The taste of Special Edition Vol. 2 is characterized by a thick, concentrated flavor, elegant acidity, and a pleasant aftertaste that seems to last forever.
